Studiul compoziției compușilor biologic activi din tomate (solanum lycopеrsicum)
2022
Marjinean, Iana
The proposed study reports on the biologically active compounds contained in tomatoes, their properties and the benefits of tomato consumption. Antioxidants in tomatoes include carotenoids such as β-carotene, a precursor of vitamin A, and mainly lycopene, which is largely responsible for giving the fruit its red hue; vitamins such as ascorbic acid and tocopherols; and phenolic compounds such as flavonoids. Regular consumption of tomatoes and tomato products is associated with a healthy and balanced life. Current studies demonstrate the numerous benefits of tomato bioactive compounds, either isolated or in combined extracts, such as anti-cancer, anti-cholesterolemic, anti-diabetic, cardioprotective and hepatoprotective effects.
