The results of studies on diversification of meat products with rational use of rabbit meat are presented. The current state of rabbit breeding on a global and national scale is considered. Data on the chemical composition of rabbit meat compared to other animal species are presented. The absence of rabbit meat products in the Republic of Moldova is shown, both in terms of manufacturing recipes and technology. It is noted that rabbit meat satisfies more than 50% of the daily intake of animal protein, which makes it possible to assign rabbit meat products to functional products without adding additional raw materials.
