Abstract: A set of multi-choice format tests is presented to increase foodservice administrators' general technical and operational knowledge. The questions encompass current findings and newer concepts for addressing problems and needs. Numerous questions are provided in each of the tests, which cover: administrative skills and support systems; regulations and unions; food cost estimation; terminology; food purchasing and menu planning; storage, inventory, delivery, and recordkeeping; pre-readiness and food preparation; and kitchen management, food safety, and dish-washing. Answers and literature references to all questions are provided (wz).
