Abstract: Nutrition is considered from the perspectives of biochemistry, physiology, and cell biology providing an interdisciplinary scientific study. Detailed consideration of nutrients is followed by a discussion of the physiological aspecs of nutrition such as digestion, absorption, nutrient exchange, and homeostatic control. Cell ultrastructure components of special interest to the nutritionist are described, with emphasis on how nutrients interact in cellular metabolism at the site of specific organelles. The morphology and function of specialized cells, including hepatocytes, erythrocytes, bone, muscle, nerve, and adipose cells are examined; adjustments in nutrient requirements of these specialized cells are discussed. The concluding section of the text considers the complex multicellular organism in terms of growth, body composition, and nutrient needs. Dietary standards and nutrition surveys are discussed also.
