Diet planning for the vegetarian

Abstract: The components of successful diet planning for the strict and lacto-ovo vegetarian are outlined in this guide developed by the Nutrition Company. The main objective of vegetarian diet planning is to provide the recommended amounts of all the essential nutrients while keeping the total calories to a level that will maintain desirable weight. Recommended steps in diet planning include 1) using a food group plan to determine what groups of food should be selected, 2) referring to an exchange system for information about the foods included in each group, and 3) checking the nutrient adequacy of the diet using food composition tables. The four major groups that form the basis of vegetarian diet are milk and milk products, protein foods (ie. legumes), whole grains, and fruits and vegetables.

Sample diet patterns are presented at 1000-, 1200-, 1500-, 1800-, 2000-, and 2200- calorie levels. Protein complementation and its importance to the strict vegetarian are explained. Vitamins and minerals (ie. vitamin B₁₂, vitamin D, calcium, riboflavin, iron, zinc) that are of special concern in the vegetarian diet are discussed. Appendices show: 1) vegetarian food exchange lists (i.e. milk, vegetables, fruits, bread, protein foods, fats), 2) sample 1500- calorie menus for strict and lacto-ovo vegetarians, 3) the Recommended Dietary Allowances (RDA), and 4) the nutrient content of some commonly used vegetarian foods.
