Abstract: A history of cheese and its importance as a food source and supplier of dietary nutrients is presented. Cheese, a popular food for 1,000 years, is a concentrated food source that contains most of the nutrients found in milk. Definitions and classifications of cheese are discussed along with production and manufacturing of various cheeses and cheese products. The nutrient content of cheese is explained. The role of cheese in the diet during varying stages of the life cycle are discussed, including the use of cheese in therapeutic diets, and cooked food, dental health and the care of cheese. References and an index are included. Twelve tables enhance the information. Figures on per capita cheese consumption and 4 tables in the appendix complete the presentation. (kbc).
