Effect of different retailing conditions on quality of sweet corn after forced-air cooling and low temperature transportation

Forced-air cooling and low temperature transportation were used as rapid cooling and transportation method for sweet corn. In this paper, experiments were carried out to evaluate the effects of different retailing conditions on sensory evaluation, weight loss, soluble sugar content, vitamin C content, and soluble protein content of sweet corn. To investigate the influence of retailing conditions on physical and chemical properties of sweet corns, sweet corns were retailed for two days in four different conditions: (A) 4°C with stretch polyvinyl chloride membrane packaging, (B) 4°C without packaging, (C) 20°C with stretch polyvinyl chloride membrane packaging, (D) 20°C without packaging. The results showed that the optimum retailing condition was under 4°C with stretch polyvinyl chloride membrane packaging among the four retailing conditions. Also the results indicated that sensory evaluation, weight loss, soluble sugar content, vitamin C content, and soluble protein content of sweet corn had significant difference under different conditions during retailing.
