Food additives: An expanding market in the '80s

Food additives affect the color, quality, flavor, shelf life and texture of processed foods. Since processed foods represent an increasing share of the total food market, growth in the additives industry can be expected to reach $4.5 billion by 1990, at an annual rate of 11%. Changing lifestyles, including greater purchases of convenience foods, use of microwave ovens, and dining out in restaurants, contribute to sales of food additives. Convenience foods require more additives than home-cooked foods to maintain freshness and desirable physical properties. Fast foods contain additives which prevent deterioration. The use of soy protein meat extenders and enzymes in processed meats has doubled the use of food additives in this category. The use of additives will also increase in dairy-type products, baked goods, sauces, dressings and oils. Although the additive content of soft drinks will not rise, the soft drink and diet drink market is expanding. Thus, both the real volume and dollar value of food additives is growing rapidly.
