Dry Milling of U.S. Hard-Endosperm Corn in Japan: Product Yield and Corn Properties

The purpose of this study was to determine the product yields of U.S. hard-endosperm corn when milled by Japanese dry milling companies. Corn from the 1987 harvest was shipped to eight different Japanese dry millers. The yield of grits, flour, and combined hominy feed and germ were measured and reported by participating millers. Participants reported grits yields for the hard-endosperm corn that ranged from 4 to 12 percentage points higher than yields they normally obtained with U.S. No. 3 yellow-dent corn. The resulting increase in the value of the dry mill products ranged from 1 to 4 yen/kg, with an average for the eight mills of 2.5 yen/kg ($0.48/bu at 130 yen/$). Samples of the hard-endosperm corn and samples of U.S. No. 3 corn were analyzed in the United States for hardness, various quality characteristics, and milling evaluation factor (MEF). The hard-endosperm corn was harder, had better quality characteristics, and had higher MEF values than the No. 3 corn.
