The educational requirements and tasks performed by dietitians in Fiji are described. Features of the hospital food service there are revealed. A three year course prepares dietitians to do educational work in the hospital clinics, work in field situations, conduct demonstrations, talk to mothers' groups, and assist in school lunch programs. A Fiji hospital menu takes into consideration the different foods and preparation methods acceptable to Indians, Fijians, and Europeans. Typical foods are pictured.
