The truth about trans
1988
Blume, E.
A brief report argues that the unnatural trans fatty acids produced in the hydrogenation of fats for margarines and shortenings do not present any greater health risk than do naturally occurring cis fatty acids. Animal evidence is cited to support this argument. The weakness of experimental evidence against trans fatty acids is discussed. Information also is provided on the fat-cancer relationship and on the influence of dietary fat in modifying cell membranes and their functioning.(wz)
