Salt was probably man's first food additive, used to enhance flavor and preserve meat and fish. Americans like salt, consuming 2 to 2 1/2 teaspoons per day or 8 1/2 lbs. a year. As salt is 40% sodium, Americans consume 4 to 5 grams of sodium per day, way above the "adequate and safe intake" of 1.1 to 3.3 grams of sodium recommended by the National Research Council. Sodium intake has been linked to hypertension, and Americans are being encouraged to use less sodium, while the FDA plans to propose that sodium content be declared on nutritional labeling. The hidden sodium in processed foods can create problems for certain people. Salt substitutes and low-sodium foods are now available; however, many complain of the resulting bland taste.
