Effect of freezing on distribution of trace elements and minerals in human and cow's milk

A study evaluated whether freezing (-20 degrees C) prior to fractionation affects the distribution of various minerals and trace elements (Fe, Cu, Zn, Ca, and Mg) among different fractions of human and cow's milk. The results indicated that freezing produced no significant changes in the mineral and trace element distributions in fractions of either milk source, suggesting the unlikeliness that freezing will affect the bioavailability of these elements in human or cow's milk. Tabular data are presented for the distribution of each element across a variety of frozen and unfrozen milk fractions. (wz)
