A review article summarizes and discusses the chemical and physical properties of the diverse group of compounds considered as dietary fiber and some of the methods used for determining the fiber content of foods. The physiological effects of dietary fiber in disease prevention also are discussed. The 3 major fractions of dietary fiber (structural and nonstructural polysaccharides, and structural nonpolysaccharides) and their major polysaccharide components (cellulose, pectin, hemicellulose, lignin) are described. Gravimetric extraction, chromatographic, and enzymatic methods used in fiber analysis are cited. Physical properties examined are bacterial degradation, water uptake, adsorption of organic compounds (e.g., bile acids, cholesterol), and cation exchange. Physiological responses that are influenced by such physical properties are described.(wz)
