; A speech made at the 1978 Food and Agricultural Outlook Conference is presented in full. The speaker points out that the Dietary Goals for the United States are an attempt to arrive at a more reasonable dietary pattern than the diet of most Americans. Evidence of dietary factors in relationship to disease is cited. The real issue is how soon, by what methanisms, and how rapidly we move to encourage consumption of a more moderate diet. Actually the Goals are relatively moderate recommendations.
