The aim of this work is to provide a detailed analysis of the relationship between processed-meat consumption and cardio-metabolic risk and then to draw main conclusions from available epidemiologic studies. The higher risk for the type 2 diabetes or glucose metabolism abnormalities is reduced after adjustment on BMI. The cardiovascular morbidity or mortality risks varies according to studies and most often remains moderate except for very high consumption. Zero consumption could be less harmless than a small or moderate consumption. Many studies emphasize the importance of confounding factors and the fact that large consumers have less favourable dietary patterns. The mechanisms of these associations are discussed. We underline the French specificities about the type of processed meat and the culinary combinations. We propose to focuse on large consumers who must reduce the quantities consumed and improve their dietary diversity. The restriction is not justified beyond the age of 70 due to some positive nutritional characteristics of these foods and to the lack of studies specific to this population.
