Excessive heating of fats in the presence of air results in the formation of toxic products. An intubation experiment was done with rats to determine the toxicity of distillable non-urea adductable (DNUA) materials obtained from thermally oxidized corn oil (CO) and olive oil (OO). Within three days after intubation with CO or OO, rats receiving DNUA-OO lost weight, while those intubated with DNUA-CO gained weight and were similar in appearance to the controls. DNUA-OO was found to be very toxic, while CNUA-CO was not.
