Cereal-based diets to meet protein requirements of adult man

Protein-calorie malnutrition (PCM) can be alleviated in part by adequate cereal consumption, particularly protein-enriched cereals (especially corn, rice, and wheat). These grains contain variable but significant amounts of essential amino acids (EAA). Through genetic modification the protein content of these grains can be increased. When eaten with some foods the complementarity can enhance total intake of EAA. This influences the quality of protein needed to satisfy growth and tissue repair. Lysine is especially important and at least twice the minimal requirement needs to be present for efficient protein utilization. (kbc)
