In the course of our experiments it has been stated that the suppressibility of the polarographic oxygen maxima can suitably be applied for starch investigations, too. The maxima suppression curve of starch has been mathematically described on the basis of the isotherm of Langmuir. The ways in which the oxygen content of the solution modifies the above isotherm, has been investigated. In the above article the maxima suppressibility has been dealt with respect to the following territory of starch investigation: To investigate the process and the mechanism of gelatinization, to investigate the acid hydrolysis, to investigate the retrogradation.
