Cancer-blocking agents found in common foods
1979
Brody, Jane E.
It was reported at a symposium on the environmental determinants of cancer that researchers have discovered a number of common substances, including several sulfur-containing pesticides, BHA and BHT, Vitamins C, E, and some chemical relatives of Vitamin A, and a group of chemicals naturally present in cabbage, Brussels sprouts, and broccoli, which show effectiveness against cancer-causing chemicals. Low-fat diets were proven effective in preventing cancers in animal studies. The current understanding of chemical carcinogenesis, the process through which chemicals cause cancer, is explained.
