The fatty acid and cholesterol content of the average Finnish diet has been determined. In this study, a representative Finnish daily diet was composited twice a year. The food consumption data were mainly derived from the national food balance sheets (for 1987). The average dietary fat intake in Finland was 86 g/day expressed as fatty acids and 90 g/day as triacylglycerols of which amount saturated, monounsaturated, and polyunsaturated fats accounted for 54, 32, and 14%, respectively. The principal sources of dietary fat in the average Finnish daily diet were edible fats (44%), dairy products and eggs (34%), and meat (15%). The P/S ratio was 0.20 and the ratio of n-6 to n-3 was 4.6. The amount of trans-fatty acids in the average daily diet was 1.7 g, the main source (79%) being edible fats. The percentage of fat from the dietary energy level (10.1 MJ) was 34%; saturated fat accounted for 18%, monounsaturated for 11%, and polyunsaturated for 5% of the caloric intake. The average daily diet contained 440 mg cholesterol, which was mainly (46%) derived from dairy products and eggs.
