Insulin and glucose responses to various starch-containing foods in type II diabetic subjects

A study of untreated male patients who had been diagnosed with type II diabetes assessed the effects of several commonly used high-starch foods and cooked cornstarch containing low-to-high amylose levels on circulating insulin and glucose levels. Meals containing bread, oatmeal, rice, lentils, kidney beans, and high-amylose corn muffins (50 g carbohydrate each) produced a lower glucose response than did 50 g of glucose; however, the corresponding insulin response was greater that that predicted from the glucose response for most of these foods, suggesting that insulin response cannot be reliably predicted by glucose response. The data also suggest that high-amylose starch foods may be useful for such patients if acceptable to the patient.(wz)
