A nutrition knowledge test for high school students

A 74-item test assessing practical nutrition knowledge was administered to 299 high school senior girls. Test items examined basic nutrition concepts in 3 content areas: nutrients in foods and effects of processing on nutrients; variations in human nutrient needs and food substitutions; and meeting human nutrient needs through the diet. Analysis of test results resulted in the elimination of items due to inappropriate levels of difficulty, poor discrimination, or lack of relatedness to factor analysis groupings. The 27 remaining items may be useful for achievement tests at the high school level. Cooperation between content and measurement experts is needed for the development of reliable and valid test instruments that assess nutrition knowledge.
