Variability in Non-Structural Carbohydrate and Gel Consistancy in Different Genotypes of Rice (Oriza sativa L.)

This study investigated evaluation of the nonstructural carbohydrate in different rice genotypes and these experiments were conducted at Department of Biochemistry of the N.D. University of Agriculture and Technology, Kumarganj, Faizabad. The trials were conducted during Kharif season, 2011–12 and the rice genotypes were collected for the evaluation of different rice genotypes of non-structural carbohydrate and gel consistency. 2011–12 to Kharif season, 2012–2013. Evaluation of the in different rice genotypes, total sugars content 0.250–0.323 (%), maximum total sugars content was recorded in case of Narendra Usar Dhan-3 (1.427%), nonreducing sugars content 0.724–1.167 (%), maximum non-reducing sugars content was found 1.167 (%) in genotype Narendra Usar Dhan-3. amylose content 17.12–23.92 (%), maximum amylose content was found 23.92 (%) in genotype Kalanamak. Starch content rage from 71.89–89.90 (%), maximum starch content was found 89.90 (%) in genotype Kalanamak. Gel consistency varied from 71.33–92.00 (mm) Maximum gel consistency was found 92.00 mm in genotype Kalanamak.
