Hotel Generated Food Waste and Its Biogas Potential: A Case Study of Jaipur City, India

With the prompt escalation in the number of arrivals of international and domestic tourists, the hotel industry of Jaipur; Rajasthan is also expanding at a rapid pace. Simultaneously, the money invested in the procurement of food items and its careless disposal after being wasted could largely affect the environmental behaviour towards the living beings and public image of the hotel sector. This paper reports the amount and nature of food being wasted in different class of hotels in Jaipur, India by conducting a survey study on 70 hotels regarding food waste generation. Strategies incorporated by hotels to address these issues are also highlighted along with theoretically estimation of biogas production potential from the food waste using the elemental analysis.
