Biochemical indices in humans of protein nutritive value. I. Urinary inorganic sulfate excretion at a high protein intake level

Extract: Four subjects consumed each of six or seven protein sources for four days at levels providing 1 gm protein/kg body weight/day. Complete 24-hr urine collections were analyzed for inorganic sulfate, urea N, total N and creatinine. Relative Protein Values (RPV), determined by rat assay, were determined for each type of protein. Correlations were high between RPV and sulfate excretion when values for wheat gluten were omitted. Inclusion of gluten values markedly reduced this apprarent relation between sulfate excretion and estimated protein nutritive value. Under the conditions used, sulfate excretion was dependent upon dietary sulfur amino acid intake and not protein nutritive value per se.
