Retention and distribution of iron added to cow's milk and human milk as various salts and chelates

An animal study compared the bioavailability and tissue distribution of iron (Fe) from 4 Fe chelates with 2 commonly-used Fe salts (chloride and sulfate) added to cow's milk and to human milk. Bioavailability of Fe was higher from the human milk than from cow's milk diets for all Fe sources except the citrate and lactobionate chelates (the reverse was found for Fe lactobionate, while that for Fe citrate was similar for both milks). Tissue distribution, however, was similar for both milks and for all Fe sources, suggesting a similar Fe metabolism once Fe is absorbed. (wz)
