Relationship of calorie content and meal weight to plate waste of school lunches in selected elementary schools in South Carolina

Extract: The present study determined meal weight, and plate waste on two specified menus in nine selected elementary schools. Adequacy of calorie content and relationships between each of the study parameters were explored. Calories were analyzed and plate waste was assessed visually. Statistical analyses included analysis of variance, Spearman correlations, and multiple regression. Among the nine schools, significant differences were observed for meal weight and calories per meal for both menus. Mean calorie content for the menus was 732 and 715 for Menus A and B, respectively. Average calorie content of meals prepared from Menus A and B was less than one-third the Recommended Dietary Allowances for children, ages 7 to 10, and for males, ages 11 to 14. One-third of the RDA for calories was met for females, ages 11 to 14, by Menu A; however, Menu B did not meet the calorie requirement for this group. Mean plate waste was approximately one fourth of the total meal for both menus, but was significantly higher for Menu A than for Menu B. A significant relationship was observed between calories per meal and plate waste for only one menu. Meal weight was found to be a major contributor to plate waste for Menu B; as meal weight increased, plate waste increased. (author)
