The repercussion of bioflavonoids, especially quercetin, in the scientific field is essentially linked to its chemical characteristics that can be active in the prevention, for example, of cardiovascular and hepatic diseases, which make it, therefore, a target of wide interest for the pharmaceutical industries. and for the scientific community. As they are natural compounds, they play a key role in the body as they have antioxidant and anti-inflammatory properties. Especially quercetin, included directly or indirectly in the diet of individuals, but in varying amounts for each food, stands out for its various properties that exert beneficial activities to metabolism. This article aimed to verify the effect of quercetin on blood glucose levels and body weight in Wistar rats. For the accomplishment of the study, Wistar rats were used randomly distributed in sedentary controls, these had a standard feeding and experimental group exclusively supplemented with quercetin, being evaluated for determined period. After the intervention period, all animals were reassessed for body weight and blood glucose. Subsequently, from the data obtained, the SPSS software was used, through which the results were statistically analyzed. All procedures were approved by the Ethics Committee on Experimentation and Animal Welfare of the State University of Montes Claros-CEEBEA/Unimontes (approval number: 101/2016). In the results presented here, no significant differences were found in the weight of both groups. As for the blood glucose of the experimental group, they were significantly reduced by quercetin.
