Healthful eating is becoming the way of life for a growing number of Americans. Restaurant patrons are even changing their ordering styles. They are more inclined to order main dishes which are lower in fat and/or red meat. They also tend to order decaffeinated coffee rather than regular, and skip rich desserts. Restaurant owners can gain from such knowledge by providing menu selections to suit the needs of the patron. Diners appreciate menus which offer a "light" meal section. It takes education to improve the nutritional quality of restaurant dishes, but it behooves the successful restauranteur to adjust recipes in order to incorporate the desires of the customer.(lsp)
