An ice-cold view of the prospects for frozen foods

Some factors which affect the sales of frozen foods in the Midlands of England are highlighted. An abundance of school lunch staff made preparation of fresh food preferable. Short working hours involved in preparing frozen entrees were unattractive to the staff. Existing conventional equipment made the use of frozen foods unfeasible. Advantages include minimal staffing requirements in school kitchens built to handle frozen foods; complete, per-portion cost control; and, a dependable product. Overall, the future looks good for frozen food sales in the institutional area.
