Considerations for the purchase and use of deep fat fryers

Six manufacturers offer information on what an operator should look for when purchasing a deep fat fryer. Points to consider are: the amount of money to be spent, the amount of automation desired, energy consumption and fuel costs, the number of fryers to be used, the individual capacity, and cooking rates. A formula for determining the needed size of fryer is provided. The fryer should have a proper recovery time when adding ingredients and be easy to clean. Other items mentioned are type of metal, placement of thermostat, and warranty, service and reputation of the dealer.
