Drilling for the right oil

Research has found that people who follow a diet that is relatively high in olive oil have more desirable blood cholesterol, blood pressure, and blood sugar levels than those who use butter instead. This does not mean, however, that olive oils should be used as a food supplement for therapeutic or preventive purposes. It can be used to replace dietary saturated fats which appear to be the key to lowering blood cholesterol regardless of monounsaturated fat consumption. This article discusses the relative levels of saturation of olive, safflower, corn, sunflower, soybean, canola and peanut oils.
