Metal or utility shelving is essential equipment in food service operations. Recommended shelving consists of round uprights, and shelves of stamped steel or welded wire in a given length and width. Materials commonly used in shelving are stainless steel, aluminum, carbon steel with epoxy or similar resin coating, and mild steel with epoxy or other resin. A number of material combinations are discussed along with their advantages and disadvantages, such as moisture and chemical resistance. A number of shelving styles exist: flat stamped steel with or without a lip or embossing; louvered; and welded steel wire (a rod). Gauges commonly used are explained. Sales representatives must understand what products are stocked by the distributor and be able to recommend one type over another for a specific job. Load weight must be estimated if the shelf is to be strong enough and fits the operation. (kbc)
