Energy content of selected salad bar and hot serving line meals

A study compared the macronutrient content of 12 salad bar and 12 traditional hot meals randomly collected from female meal-ticket holders after their selection of the foods in a university cafeteria. Each salad bar meal or hot meal was weighed, homogenously blended, and subsequently analyzed for protein, fat, carbohydrate, fiber, ash, and energy content. The energy content and the percentages of calories supplied from protein, fat, and carbohydrate were similar for the 2 meal types. A spread of 2- to 4-fold was observed in the range of values for the macronutrients in the 2 meal types. It is concluded that self-made salads are not necessarily low in calories or fat.(wz)
