Testing consumer's knowledge of food and nutrition

The results of national representative surveys conducted by the Food and Drug Administration are reported. Consumers' knowledge of food and nutrition was ascertained from examination of their purchasing behavior, nutrition beliefs, basic nutrition knowledge, and comprehension and use of open dating and nutrition labeling. Throughout the entire survey, it was found that education was the strongest influence on nutrition knowledge. Tables show percentages for understanding of nutrition labeling and for food beliefs.
