Selenium in foods purchased or produced in South Dakota

The results of trace selenium (Se) analysis is reported in 222 foods obtained in South Dakota. Sixty-seven cereal foods, 17 dairy products, 11 seafoods, 5 fruits, 47 meat products, 16 nuts and seeds, 7 poultry products, 8 sugars and sweets, 30 vegetables, and 14 miscellaneous food items were covered. Most Se values reported represent mean values determined from analysis of multiple samples. Highest Se levels were found in high protein foods. Native cheeses, semolina products, breads, soybean-based breakfast cereals, hard wheat or oats, poultry, eggs, and selected seafoods are examples. Se content ranged from 6 ppb, as in cucumbers, to about 30 ppm, as in brazil nuts. Mean Se values found for South Dakota foods were generally lower than Canadian foods; however, they were higher than Washington, D.C. foods, and much higher than Ohio foods. A mean Se level of 61 micrograms/L was found in milk from 8 South Dakota processing plants, with highest and lowest levels occurring in December and May, respectively. (wz)
