Cleaning food production and processing equipment is a complex production process that depends on multiple factors: design features and materials from which the equipment is made, cleaning methods, detergent solutions and washing intervals. The Udmurt State Agricultural University has an experience in process equipment maintaining to provide food safety. The purpose of the work was to study and determine the design and process parameters of the multifunctional control module of actuating devices in the production of quick-frozen semi-finished products from potatoes. During the work, the studies of classifying a heap of cut potatoes and contamination of the sorting surface, depending on the physical and chemical properties of the raw materials supplied to be processed were carried out. A scheme of interaction of the elements of the multifunctional module is proposed and 4 stages of the production and technological process are substantiated. To confirm the results of theoretical studies, experiments were carried out on a plant model for which the Arduino Mega 2560 platform built on the ATmega 2560 microcontroller was used at the control actuator module. The sorting surface could be cleaned to a desired degree when the cleaning cycle of 10 min is fixed, which corresponds to the time range of routine break, the pressure of detergent solution of 5-5.5 MPa, the concentration of 5%, temperature of 45-55 deg. C. The use of the design provides cleaning without disassembling the equipment, reduces the time spent on washing, improves the quality of the final product.

Очистка оборудования для производства и переработки пищевой продукции – сложный производственный процесс, зависящий от множества факторов: конструктивных особенностей и материалов из которого изготовлено оборудование, способа очистки, моющих растворов и интервалов мойки. В Удмуртском ГАУ существует опыт обслуживания технологического оборудования для обеспечения безопасности пищевой продукции. Цель работы - исследование и определение конструктивно-технологических параметров многофункционального модуля управления исполнительных устройств при производстве быстрозамороженных полуфабрикатов из картофеля. В процессе работы были выполнены исследования процесса сортирования вороха резаного картофеля и загрязнения сортирующей поверхности в зависимости от физико-химических свойств поступающего на переработку сырья. Предложена схема взаимодействия элементов многофункционального модуля и обоснованы четыре этапа производственно-технологического процесса. Для подтверждения результатов теоретических исследований осуществлены эксперименты на модели установки, для которой в модуле управления исполнительных устройств была использована платформа Arduino Mega 2560, построенная на микроконтроллере ATmega 2560. При фиксированной продолжительности цикла очистки 10 минут, что соответствует интервалу времени технологического перерыва, давлении моющего раствора 5-5,5 МПА, концентрации 5%, температуре 45-55 град. С удалось очистить сортирующую поверхность до необходимой степени. Применение конструкции позволяет провести очистку без разборки оборудования, сокращает затраты времени на мойку, повышает качество конечного продукта.
