Roadmap de tecnologías IoT para la transformación digital de la Cooperativa de Panificadores de Santander | Roadmap of IoT technologies for the digital transformation of the Santander bakery cooperative

Las pequeñas y medianas empresas (PYME) son un motor esencial de la economía del país. Durante las últimas décadas, las PYME han adoptado e implementado tecnologías digitales. La adopción de tendencias tecnológicas como el Internet de las Cosas es un reto para las PYMES, teniendo en cuenta sus limitaciones financieras y tecnológicas. La Cooperativa de panificadores de Santander es una empresa transformadora de alimentos derivados del trigo, siendo una pequeña y mediana empresa que se vería beneficiada de una transformación digital, esta tesis tiene como objetivo guiar la adopción de IoT en la toma de decisiones de la Cooperativa de panificadores de Santander mediante la implementación de un roadmap de tecnologías IoT. Este roadmap está respaldado en un Sistema de Apoyo a la Decisión (DSS). A su vez, las tecnologías agregadas en el roadmap son afines directamente a la línea de trasformación y manufactura de alimentos derivados del trigo.

Small and medium-sized enterprises (SMEs) are a key driver of the country's economy. Over the past decades, SMEs have adopted and implemented digital technologies. The adoption of technological trends such as the Internet of Things is a challenge for SMEs, considering their financial and technological limitations. The Cooperativa de panificadores de Santander is a food processing company derived from wheat, being a small and medium enterprise that would benefit from a digital transformation, this thesis aims to guide the adoption of IoT in the decision making of the Cooperativa de panificadores de Santander through the implementation of a roadmap of IoT technologies. This roadmap is supported by a Decision Support System (DSS). In turn, the technologies added in the roadmap are directly related to the processing and manufacturing line of wheat-derived foods.
