anglais. A kinematic model to obtain protein xerogels during soy granule production has been theoretically studied. A scheme was developed to produce concentrated soy proteins for the design of health-saving ingredients of food systems. It divides the technological operations according to the following classification criteria: by the type of technological impact on soybean seeds, by the type of destructive effect, by the method of isolation and concentration of protein substances, by the physical form of the final product. In the production process, there are the following stages of soy raw material modification: saturation with water, germination, drying, frying, steaming, cooking, flattening, crushing, grinding, abrasion, extraction, and others. As a result, the seeds are transformed into nutrient-adequate ingredients of various physical forms: gel, paste, flour, granulate, texturate, concentrate, isolate. The final stage in the soybean seed conversion process is drying. The removal of water molecules from protein, protein-carbohydrate, protein-vitamin, protein-mineral substances of wet granules is sequential process, determined by the movement of molecules from the center of the granule to its surface. The duration of drying of granules in a tray dryer depends on the indicator that is a physical and mechanical characteristic of a product that considers the relationship of moisture with the structure of the granule body, which has a certain water permeability. This process was determined by equations describing the kinetics of obtaining protein xerogels in the production of soybean granules. The implementation of the studies to create approaches to understanding the multifactor analysis of the drying process of soybean enriched mixtures and xerogels makes it possible to develop and select a rational technology variant to obtain food ingredients with pre-determined composition and properties.

russe. Теоретически исследована кинематическая модель получения белковых ксерогелей при производстве соевых гранулятов. Разработана схема получения концентрированных форм соевого белка для проектирования здоровьесберегающих ингредиентов пищевых систем. Она делит технологические операции по следующим классификационным признакам: по виду технологического воздействия на семена сои, по типу разрушающего воздействия, по способу выделения и концентрирования белковых веществ, по физической форме конечного продукта. В производственном процессе имеются следующие стадии модификации соевого сырья: насыщение водой, проращивание, высушивание, прожаривание, пропаривание, варка, плющение, дробление, перемалывание, истирание, экстракция и др. В итоге семена преобразуют в нутриентоадекватные ингредиенты различной физической формы: гель, паста, мука, гранулят, текстурат, концентрат, изолят. Заключительный этап процесса преобразования семян сои - сушка. Удаление молекул воды из белковых, белково-углеводных, белково-витаминных, белково-минеральных веществ влажных гранул носит последовательный характер, обусловленный перемещением молекул от центра гранулы к ее поверхности. Продолжительность сушки гранул в лотковой сушилке зависит от показателя, который является физико-механической характеристикой продукта, учитывающей связь влаги со структурой тела гранулы, имеющего определенную водопроницаемость. Данный процесс определили при помощи уравнений, описывающих кинетику получения белковых ксерогелей при производстве соевых гранулятов. Реализация исследований по созданию подходов к пониманию многофакторного анализа процесса сушки соевых обогащенных смесей и ксерогелей дает возможность разработки и выбора рационального варианта технологии получения пищевых ингредиентов с заданными составом и свойствами.
