Influencia de las variantes genéticas de la B-lactoglobulina sobre el pH, caseína total: rendimiento en cuajada en ovejas | B-lactoglobulin genetic variants influence on pH, total casein and curd yield in manchega sheep breed

The incidence of 13-lactoglobulin variants (f3¬Lg) on milk pH, caseins content and curd yield has been analysed on 918 Manchega sheep, under Official Milk Recording, in the CERSYRA of Valdepeñas (Ciudad Real). For the B-Lg, three phenotypes has been identifyed (AA,AB, and BB) regulated by an autosomal locus with two codominant alleles: A (p)=0.6I and B (q)=0.39.The obtained results show that the 13-Lg genetic variants have an effect on milk pH, because tha AA phenotype has a medium values of pH significantly (p<0.05) more alkaline than those corresponding to BB phenotype. There are not significant differences between the pH values of the heterozygous phenotype andthosepH values corresponding to the homozygous AA and BB phenotypes (AA = 6.69"; AB= 6.66" and BB= 6.61"). Highly significant differences (p<_0,001) are observed among the values of total protein content (AA= 58.67" ; AB= 59.29" and BB= 54.96b), total casein ( AA = 47.38"; AB = 49.31" and BB= 42.42") and curd yield (AA = 332.29"; AB = 336.59" and BB= 307.46") obtained for the AA and AB phenotypes, and those resulting for the BB homozygous one, been this phenotype the one which present the most unfavourable values for those three characters.

Se han utilizado 918 ovejas de raza Manchega sometidas a Control Lechero Oficial en el CERSYRA de Valdepeñas (Ciudad Real), analizándose la incidencia de las variantes genéticas de la B-lactoglobulina (f3-Lg) sobre el pH de la leche, su contenido en caseínas y el rendimiento en cuajada. Identificamos tres fenotipos para la B-Lg (AA, AB y BB) regulados por un locus autosómico con dos alelos codominantes: A (p) = 0,61 y B (q) = 0,39. Los resultados obtenidos muestran un efecto de las variantes genéticas de la f3-Lg sobre el pH de la leche, presentando el fenotipo AA unos valores medios de pH significativamente (p<0,05) más básicos que los correspondientes al fenotipo BB. No existen diferencias significativas entre el pH del hetero¬cigoto y el correspondiente a los homocigotos AA y BB (AA = 6,69"; AB= 6,66" y BB= 6,6 111). Se observan diferencias altamente significativas (p<0,00 I) entre los contenidos de proteína total (AA= 58,67"; AB= 59,29"y BB= 54,96b), caseína total (AA= 47,38"; AB= 49,31" y BB= 42,42b) y rendimiento en cuajada (AA= 332,29"; AB= 336,59" y BB= 307,466) obtenidos para los fenotipos AAy AB y los resultantes para el homocigoto BB, presentando este último fenotipo los valores más desfavorables para estos tres caracteres.
