[EN] Honey is one of the foods most likely to be adulterated. In this final degree work, it was evaluated the ability of an electronic tongue system, based on electrochemical techniques (potentiometry, cyclic voltammetry and pulse voltammetry) with metal sensors, for identifying adding syrup in honey. The electronic tongue used in this work, was developed by the Center for Molecular Recognition and Technological Development (IDM) of the Polytechnic University of Valencia (UPV). This tongue used 8 metal sensors with different reactivities, as working electrodes: 4 noble metals (Ir, Rh, Pt and Au) and 4 non‐noble metals (Ag, Co, Cu and Ni). The work was developed with two types of honey (sunflower and heather) and 3 types of syrup (corn, agave and cane), that were mixed in different proportions. Potentiometric technique did not provide good results. However, voltammetric techniques, both cyclically and pulse, together with multivariate statistical tools (PCA), were able to identify adding syrup in honey. Furthermore, Partial Least Squares analysis (PLS), yielded good prediction models.
