The general objective of this research was to propose the use of bovine colostrum as an alternative for the production of probiotics. The methodology implemented was a literature review of the last few years. The results indicate that bovine colostrum is a mixture of bioactive compounds with numerous benefits, lactoferrin inhibits pathogens and stimulates the immune system, immunoglobulins provide passive immunity and prevent infections, growth hormones (prolactin and estradiol) stimulate tissue repair and growth, oligosaccharides present a probiotic effect, lysozyme dissolves bacterial membranes, lactoperoxidase has antibacterial activity, α lactoalbumin is responsible for controlling the immune response, on the other hand antioxidant enzymes and β-lactoglobulin present antibacterial and antioxidant activity. In the food supplement industry it is used in powder, freeze-dried or capsules, to affect the immune system and digestive health, especially in athletes, in the food industry it is added in the form of proteins such as shakes, yogurts, in the cosmetic industry it improves the elasticity and appearance of the skin for its regenerative and antioxidant action, and the pharmaceutical industry its use in therapies for intestinal and inflammatory diseases. The consumption of bovine colostrum strengthens the immune system, increasing immunoglobulins, balancing the intestinal microflora, improving digestion and intestinal integrity, reducing inflammation in chronic diseases. Dosages vary in powder form from 10-20 g/day, in liquid form from 10-20 mL/day and in capsules from 500 mg to 2 g/day

Afficher plus [+] Moins [-]El objetivo general de esta investigación fue proponer el uso del calostro bovino como una alternativa para la producción de probióticos. La metodología que se implemento fue de revisión bibliográfica de los últimos años. Los resultados indican que el calostro bovino es una mezcla de compuestos bioactivos con numerosos beneficios, la lactoferrina inhibe patógenos y estimula el sistema inmune, la inmunoglobulinas aporta inmunidad pasiva y evitan infecciones, las hormonas del crecimiento (prolactina y estradiol) estimulan la reparación y crecimiento de tejidos, los oligosacáridos presentan un efecto probiótico, la lisozima disuelve las membranas bacterianas, la lactoperoxidasa tiene actividad antibacteriana, la α-lactoalbúmina es la responsable de controlar la respuesta inmunológica, por otro lado las enzimas antioxidantes y la β-lactoglobulina presentan una actividad antibacteriana y antioxidante. En la industria de los suplementos alimenticios es empleado en polvo, liofilizado o cápsulas, para incidir en el sistema inmune y la salud digestiva, especialmente en deportistas, en la industria alimentaria se añade en forma de proteínas como batidos, yogures, en la industria cosmética mejora la elasticidad y apariencia de la piel por su acción regenerativa y antioxidante, y la industria farmacéutica su uso en terapias de enfermedades intestinales e inflamatorias. El consumo del calostro bovino fortalece el sistema inmunitario, aumentando las inmunoglobulinas, equilibrando la microflora intestinal, mejorando la digestión y la integridad intestinal, reduciendo la inflamación en enfermedades crónicas. Las dosis varían en polvo entre los 10-20 g/día, en liquido de 10-20 mL/día y en cápsulas de entre 500 mg y 2 g/día.
