Efecto de la sustitución parcial del salvado de avena (Avena sativa) por harina de paleta de tuna (Opuntia ficus-indica) y kiwicha (Amaranthus caudatus) expandida por harina de tarwi (Lupinus mutabilis) sobre las características fisicoquímicas y aceptabilidad general de una barra alimenticia

Se evaluó el efecto de la sustitución parcial de salvado de avena por harina de paleta de tuna (30, 20, 10%) y kiwicha expandida por harina de tarwi (20, 15, 10%) sobre la humedad, el contenido de proteínas, fibra cruda, firmeza y aceptabilidad general en una barra alimenticia. Para el análisis sensorial se trabajó con 66 panelistas no entrenados. La prueba de Levene demostró homogeneidad de varianza y el análisis de varianza indico un efecto significativo (p<0.05) de las formulaciones sobre cada una de las variables paramétricas, luego se aplicó la prueba de comparaciones múltiples de Duncan. Para la aceptabilidad general, la prueba de Friedman demostró diferencia significativa (p<0.05) y, por tanto, se complementó con la prueba de Wilcoxon, no encontrando diferencia significativa. El tratamiento con la sustitución parcial de salvado de avena por harina de paleta de tuna (30%) y kiwicha expandida por harina de tarwi (20%) fue seleccionado como el mejor debido a que presentó el menor contenido de humedad 9.24%; el mayor contenido de proteínas con 10.51%; mayor contenido de fibra cruda con 4.49%; mejor firmeza con 28.18 N y presentó la mejor aceptación sensorial con 7.17 puntos que representa “me agrada bastante

The effect of partial replacement of oat bran with prickly pear shoulder flour (30, 20, 10%) and expanded kiwicha with tarwi flour (20, 15, 10%) on moisture, protein content, crude fiber, firmness and general acceptability in a food bar. For the sensory analysis, we worked with 66 untrained panelists. Levene's test demonstrated homogeneity of variance and the analysis of variance indicated a significant effect (p<0.05) of the formulations on each of the parametric variables, then Duncan's multiple comparisons test was applied. For general acceptability, the Friedman test showed a significant difference (p<0.05) and, therefore, it was complemented with the Wilcoxon test, finding no significant difference.
