Evaluación de los perfiles fenólicos de aceites de oliva virgen mediante NIRS

Extra virgin olive oil (EVOO) is a key component of the Mediterranean diet, known for its sensory qualities, nutritional value, and health benefits. Phenolic compounds, influenced by variety, geography, and practices, contribute to EVOO's quality. The Gen4Olive project analyzed 680 EVOO samples using traditional methods, which are time-consuming and expensive. Near-Infrared Reflectance Spectroscopy (NIRS) offers a faster, cheaper, and non-destructive alternative. This master's thesis aims to evaluate the phenolic profile of these EVOO samples using a portable NIRS microsensor. The results show that while NIRS can effectively predict total phenols and hydroxytyrosol derivatives, its ability to predict individual phenols is limited.
