Перспективы разработки рецептур в сегменте мучных сладостей с дифференцированным содержанием основных нутриентов | Prospects for the development of recipes in the segment of flour sweets with a differentiated content of basic nutrients

The article presents the results of an analysis of the flour confectionery market in the Republic of Belarus according to various criteria, including nutritional value and recipe composition. It was established that in the studied segment there are no products for special purposes, characterized by a high protein content. An analysis of the quantitative content of the main recipe components of flour confectionery products in various segments was carried out, the results of which made it possible to establish the range of variation of the main recipe components that form the structure and consumer properties of flour and confectionery products. The range of non-traditional raw materials has been studied and types of raw materials have been selected, the use of which will ensure differentiation of the content of basic nutrients, such as protein and dietary fiber, in the products being developed. / В статье представлены результаты анализа рынка мучных кондитерских изделий Республики Беларусь по различным критериям, в том числе пищевой ценности и рецептурному составу. Установлено отсутствие в изучаемом сегменте продукции целевого назначения, характеризующейся повышенным содержанием белка. Проведен анализ количественного содержания основных рецептурных компонентов мучных кондитерских изделий в различных сегментах, результаты которого позволили установить диапазон варьирования основных рецептурных компонентов, формирующих структуру и потребительские свойства мучных и кондитерских изделий. Изучен ассортимент нетрадиционного сырья и подобраны виды сырья, использование которого позволит обеспечить дифференциацию содержания в разрабатываемой продукции основных нутриентов, таких как белок и пищевые волокна.
