Quantitative assessment of harmful impurities in food products is necessary to assess their quality and safety. When checking the compliance of the content of harmful impurities with established standards, special attention should be paid to the metrological aspects of measurement control. Ensuring the effectiveness of measurement control requires qualified teamwork not only of metrologists and practitioners who are well acquainted with the objects of control. Differences in the local concentration of harmful impurities in control objects and the impossibility of implementing an infinite number of measurements force us to develop measurement control techniques that will allow us to identify the highest concentration of harmful impurities with a rational number of measurements and proper location of control points in space. / Повышение качества и конкурентоспособности пищевой продукции невозможно без развития и совершенствования методологии и практики органолептического анализа. В статье рассматриваются основные подходы и методология дескриптивных исследований органолептического анализа, предназначенные для оценки качества молочной продуктов. В международной практике для более полной оценки органолептических характеристик молока и молочных продуктов широко используются панели дескрипторов. Панели дескрипторов для оценки конкретных сыров необходимо пересматривать, ориентируясь на многообразие видов, поскольку одни и те же характеристики для одного вида сыра могут быть желательными, а для другого могут рассматриваться как пороки.
