The article presents literature data on the influence of various factors on the growth of microorganisms in food products. Due to the fact that most food products have a large number of “barriers”, it is crucial to ensure the stability, safety and organoleptic quality of the food product. The study of the individual and combined influence of “barriers” represents a logical basis for improving the technologies used in terms of microbiological stability and safety of produced food products. The concept of barrier technology can be used for other aspects, such as achieving a certain level of food quality. / В статье представлены данные литературы по вопросам влияния различных факторов на рост микроорганизмов в пищевых продуктах. В связи с тем, что большинство пищевых продуктов обладают большим количеством «барьеров» является решающим для обеспечения стабильности, безопасности и органолептического качества пищевого продукта. Исследование отдельного и комбинированного влияния «барьеров» представляет собой логическую основу для совершенствования применяемых технологий в плане микробиологической стабильности и безопасности вырабатываемой пищевой продукции. Концепция «барьерной» технологии может быть использована и для других аспектов, например, достижения определенного уровня качества пищевых продуктов.
