Secagem e armazenamento de grãos de arroz : qualidade e contaminação por hidrocarbonetos policíclicos aromáticos | Drying and storage of rice grains : quality and contamination by aromatic polycyclic hydrocarbons

Os processos de secagem e armazenamento podem promover alterações na composição química, nas características físicas e fisiológicas, bem como na qualidade industrial de grãos de arroz. Além disso, dependendo das condições de secagem, os grãos podem ser contaminados com hidrocarbonetos policíclicos aromáticos (HPAs). O objetivo por meio do trabalho foi avaliar, após a secagem e ao longo do armazenamento, a qualidade física, fisiológica, química e industrial de grãos de arroz secos com diferentes temperaturas do ar de secagem, utilizando lenha com distintos teores de água como fonte de energia, além de investigar a presença de HPAs após o beneficiamento. O experimento foi conduzido na safra 2017/18, sendo os grãos de arroz, cultivar IRGA 424, colhidos mecanicamente quando atingiram teor de água de aproximadamente 22% em base úmida (b.u). A secagem foi realizada em duplicata, em um secador de fluxo cruzado, operando em sistema intermitente (1:1), utilizando as temperaturas do ar de secagem de 55 e 65 oC. Como fonte de aquecimento foi utilizada lenha de Eucalyptus sp. com teores de água de 12% e 32% em base seca (b.s). Após a secagem os grãos foram acondicionados em sacarias e armazenados em ambiente natural por 240 dias. A cada 60 dias, para os grãos secos utilizando a lenha com menor teor de água, foram realizadas as análises físicas, fisiológicas e o beneficiamento em branco polido e integral para a avaliação da qualidade química e industrial. A verificação da presença de HPAs foi realizada nos grãos secos utilizando a lenha com distintos teores de água e submetidos ao beneficiamento, logo após a secagem e ao final do armazenamento. A porcentagem de germinação, assim como o vigor dos grãos aumentaram durante o armazenamento, independente da temperatura do ar de secagem. Os grãos secos com maior temperatura do ar apresentaram menor vigor ao longo do armazenamento. O rendimento de grãos inteiros, dos subgrup Os teores de lipídios e proteínas diminuíram, enquanto os teores de fibras e cinzas aumentaram durante o armazenamento para os grãos do subgrupo branco polido. A composição química dos grãos do subgrupo integral não alterou durante o armazenamento. Foi detectada a presença de nove HPAs (2-metilnaftaleno, acenaftileno, benzo[a]antraceno, criseno, fenantreno, fluoreno, naftaleno, pireno e benzo[g,h,i]perileno). A maior contaminação com HPAs foi observada nos grãos do subgrupo integral. O polimento dos grãos promoveu redução na concentração de HPAs. A parboilização promoveu incremento na concentração de HPAs, mesmo após o polimento. A utilização de lenha com maior teor de água promoveu maior contaminação dos grãos com HPAs. Não foi verificado efeito da temperatura do ar de secagem sobre a concentração de HPAs nos grãos. O armazenamento não influenciou na concentração dos HPAs nos grãos, indicando não haver degradação ao longo do tempo.

Drying and storage processes can promote changes in chemical composition, physical and physiological characteristics, as well as industrial quality of rice grains. Also, depending on drying conditions, the grains can be contaminated with polycyclic aromatic hydrocarbons (PAHs). The objective through this work was to evaluate, after drying and throughout storage, the physical, physiological, chemical and industrial quality of dry rice grains at different drying air temperatures, using firewood with different moisture contents as a heating source, in addition to investigating the presence of PAHs after milling. The experiment was conducted in the 2017/18 season, with rice grains, cultivar IRGA 424 RI, mechanically harvested when they reached moisture content of approximately 22% on a wet basis (w.b). Drying was performed in duplicate, in a cross-flow dryer, operating in an intermittent system (1:1), using drying air temperatures of 55 and 65 oC. As a heating source, firewood from Eucalyptus sp. with moisture contents of 12% and 32% on a dry basis (d.b). After drying, the grains were placed in PP Woven Bags and stored in a natural environment for 240 days. Every 60 days, for dry grains using firewood with lower moisture content, physical and physiological analyzes were performed, as well as processing in polished white and brown to evaluate the chemical and industrial quality. The verification of the presence of PAHs was carried out in dried grains using firewood with different moisture contents and submitted to milling, soon after drying and at the end of storage. The germination percentage, as well as the vigor of the grains increased during storage, regardless of the drying air temperature. Dry grains with higher air temperature showed less vigor during storage. The whole grain yield of the polished white and brown subgroups decreased with increasing drying air temperature. The increase in the drying air temperature led to a reduction in the lipid content and an increase in the ash content for the grains of the polished white subgroup. Lipid and protein contents decreased, while fiber and ash contents increased during storage for the grains of the polished white subgroup. The chemical composition of the brown subgroup grains did not change during storage. The presence of nine PAHs (2- methylnaphthalene, acenaphthylene, benzo[a]anthracene, chrysene, phenanthrene, fluorene, naphthalene, pyrene and benzo[g,h,i]perylene) was detected. The highest PAHs contamination was observed in the brown subgroup grains. Grain polishing reduced the PAHs concentration. The parboilization promoted an increase in the PAHs concentration, even after polishing. The use of firewood with higher moisture content promoted greater PAHs contamination of the grains. There was no effect of drying air temperature on the PAHs concentration in the grains. Storage did not influence the PAHs concentration in the grains, indicating no degradation over time.
