Composição química de trigo e de aveia e efeito dos teores e proporções de fibra alimentar sobre a resposta biológica de frangos de corte e ratos | Chemical composition of wheat and oat and effects of levels and proportions of dietary fiber on biological response of broilers and rats

Foram conduzidos dois estudos, um com o objetivo de caracterizar e agrupar cultivares de trigo e de aveia produzidas na região Sul do País, de acordo com a sua composição química, e outro visando estabelecer relações entre as variações nos teores e proporções de fibra insolúvel e solúvel para um mesmo teor de fibra total, com respostas biológicas de não ruminantes. No primeiro, amostras de treze cultivares de trigo e nove de aveia, obtidas em dois anos de cultivo, foram caracterizadas quanto a composição química e características macrométricas, e agrupadas quanto as medidas de importância nutricional. No segundo, realizou-se dois experimentos, um com frangos de corte em crescimento alimentados com ração basal composta por milho ou obtidas mediante a substituição do milho por grãos de trigo CEP 24 ou BR 32; e outro com ratos Wistar em crescimento alimentados com ração purificada ou obtidas mediante substituição total da celulose e parcial da caseína e amido de milho por grãos descascados de aveia UFRGS 15 ou UFRGS 18. O ano de cultivo influenciou os teores de amido, proteína bruta e fibra solúvel para trigo; e de amido, para aveia. As variações entre cultivares de trigo e aveia nas medidas amido, proteína bruta, fibra total, solúvel e insolúvel permitiram classificá-las em grupos com distintas possibilidades de utilização na nutrição. A elevação dos teores de fibra insolúvel aumentou o teor de umidade da digesta, diminuiu o ganho de peso das aves e, provavelmente, a digestão e absorção de nutrientes nos ratos, sem causar alterações no desaparecimento da matéria seca, no teor de umidade das excretas/fezes e no tempo de recuperação de 50% do indicador (T50). O aumento de fibra solúvel não influiu sobre o teor de umidade das excretas/fezes e sobre o T50, mas diminuiu o desaparecimento da matéria seca, sem causar efeitos negativos sobre o ganho de peso das aves. As proporções e interações entre as frações insolúvel e solúvel da fibra talvez possam explicar a ausência de alterações sobre o T50 para as espécies animais. As diferentes fontes de fibra causaram efeitos distintos sobre algumas medidas de resposta biológica.

Two studies were conducted, the first to estimate and ciassify wheat and oat cultivars based on chemical composition, and the second to estabiish the relationship among the leveis and proportions of insoluble and soluble fiber and the biological response of nonruminants. Chemical composition, hectolitric weight and 1,000 kernel weight of thirteen wheat cultivars and nine oat cultivars were evaluated for two years, and classified based on some indicators of the nutritional grain quality. The experiments with animais were conducted by using broiler chickens fed a com control diet or with two other diets that were formulated substituting ali com by grain wheat cultivars CEP 24 or BR 32; and by using rats Wistar fed a purified control diet or with two others diets that were formulated substituting ali cellulose and part of corn starch and casein by dehulled grain oat cultivars UFRGS 15 and UFRGS 18. Significant differences for wheat starch, crude protein and soluble fiber; and oat starch were observed between the years. The variation on the starch, crude protein, total fiber, insoluble fiber and soluble fiber showed the possibie use of wheat cultivars and oat cultivars in specific strategies for nutrition. The augment of the insoluble fiber resulted in the increase of the digesta moisture, decrease of the weight gain for broiler chickens, and probabie decrease of the nutrients digestion and absorption by rats, with no influence on the dry matter disappearance, the excreta/fecal moisture and the time of the 50% appearance of the marker in excreta/feces (T50). The increase of soluble fiber resulted in the decrease of the dry matter disappearance, with no influence on the weight gain for broiler chickens, the digesta moisture and excreta/fecal moisture, and the T50. The variation in the proportions and the interactions of insoluble and soluble fiber may expiain the non alterations in the mean retention time in the animais. The different source of fiber resulted in the different biological response.
